Kelsey Caldwell and Austin Eppert met playing flag football at Iowa State University, so it made sense that they chose a recreational setting for their nuptials. The Minnesota Boat Club, located right on the Mississippi River, offers a stunning cityscape view of downtown St. Paul and features architecture that perfectly matched the couple’s rustic vintage-themed wedding. As a bonus, the club’s caterer, Mintáhoe, served up an array of fun, eclectic food. “We offered stations of macaroni and cheese, pot stickers, skewers and salad, which were all a hit,” Kelsey says. But it was the sentimental moments that were the highlight of the wedding day for the couple: Kelsey’s favorite moment was listening to her husband recite his hand-written vows, while for Austin, it was seeing his bride in her wedding dress for the first time.
