{1} Modern with a classic twist is the theme of this cake by Laurie Pyle of Minneapolis’ Cocoa and Fig. An intriguing combination of one tall tier with three traditional round tiers draws attention to the jewels and crystals, which Pyle brushed with hints of metallic luster, mimicking snow, frost, and ice. Simple white fondant covers the cake, and white satin ribbons complete the look.
{2} A white gumpaste bow tops this pièce de résistance by Penny Steele of Penny Steele Custom Cakes. In keeping with the design’s winter motif, she resisted the temptation to add flowers. Instead, gumpaste snowflakes set off the cake’s ice-blue hue, while the monogram adds a personal touch to this three-tiered seasonal delight.
{3} A wedding dress by Liancarlo was the inspiration for this fondant masterpiece by Gateaux’s Robin Martin. The intricate details make this coconut cake a work of art. Tiny ruffles daintily accent the design with vanilla mousse frosting and a passionfruit Bavarian crème filling. The flowers mimic cloth rosettes, but they’re actually artful confections in gumpaste set off with rhinestones and edible silver dragées for a straight-off-the-runway feel.
{4} “Winter can be so magical and innocent,” says Roxanne Johnson of The Cakebox Bakery in New Hope. “I wanted to make something fresh and crisp.” This winter wonderland cake is accented with a country-blue ribbon and pearls, adding an air of elegance. “One single silver brooch represents the value of new life as two become one,” says Johnson. Choose between yellow buttercake with strawberry cream-cheese filling or rich chocolate cake with almond filling.
{5} When baker Jessica Bartl of Jessica's Cakes ran across a unique piece of jewelry with a flower motif, she knew she had to work it into one of her cakes. She replicated the blossoms in sugar and wrapped the layers in fondant with a bit of sparkle to look like snow shimmering in the moonlight. Banana cake layered with Mexican bittersweet chocolate mousse and caramel buttercream is Bartl’s favored flavor combination for winter.
{6} For Darla Julin of Fantasies in Frosting in Moorhead, winter-themed cakes mean snow, and nothing says snow like snowballs! Thus a mouthwatering sugar-covered snowball tops this fun cake, with diamonds in silver and white that show up vibrantly against blue fondant. The entire design was airbrushed with edible pearl dusting to give it sparkle and shine. Julin’s signature cake flavor is amaretto with a caramel filling.
