Mitch Seiffert met Melissa Hoiberg when he swiped right on a dating app; a year and a half later, he went to an unplugged leadership retreat and after a getaway full of clarity, he realized on the flight home that he wanted to propose to her. He didn’t waste any time, calling her parents for their permission as soon as he landed, and proposing to Melissa later that day when she got home from brunch with her mother. The couple turned tradition upside down with a morning ceremony at Loring Social followed by a brunch—followed by a trip to Ireland with 40 of their guests. Inspired by a floral arrangement photo, the bride knew she wanted romantic hues of pink and mauve for their big day, which extended to their stunning wedding cake. “Since there was no dance or formal dinner, we wanted the food and atmosphere to be an experience,” Melissa says. Live music played while guests noshed on delectables such as chicken and waffles and delicacies from a roaming seafood cart. After arriving in Ireland, the newlyweds and their guests continued the party with a fairy-tale formal dinner and dance at Kinnitty Castle, with an abundance of flowers and candlelight. After the reception, the couple and their guests spent a week of adventuring around the stunning Irish coast.
