(far left) Lifts between each tier make this effervescent cake seem to float, rising like bubbles in a glass of champagne. “A lighter flavor would complement the delicate look of this cake,” says Buttercream’s Rachel Adams, suggesting amaretto white cake spritzed with amaretto liqueur and layered with white chocolate almond mousse filling.

(center left) The crisp square shape of this opulent cake is perfectly balanced by the Moroccan lattice pattern adorning the large center tier. Pink gum-paste petals on top add a hint of softness and romance. Looking for flavor inspiration? Gateaux Inc.’s Robin Martin suggests something exotic like coconut cinnamon cake with Madagascar bourbon vanilla mousse and passion fruit Bavarian cream.

(center) Penny Steele of Penny Steele Custom Cakes says she often gathers inspiration from wedding gowns. Fabric ribbons add texture to this cake, and the dramatic gum-paste rose completes the fashion feel. Steele suggests a different flavor for each tier, like raspberry limoncello butter cake or orange ricotta cake with Grand Marnier filling.

(center right) “Gold cakes make a statement and complement almost any other color combination a couple is using for their wedding,” says Cocoa & Fig co-owner Laurie Lin, who dreamed up this dramatic almond cake with strawberry buttercream. The spray of gum-paste flowers, scalloped base and embossed details showcase the shimmer.

(far right) Designer Jan Stephens of Cakes by Jan created a clean and modern cake that turns whimsical, thanks to fondant embellishments. The gold polka dots on the top tier recall a vintage hobnail cake plate, but the mod chevron pattern on the base layer and cheery daisy topper keep it right on trend.
